This wine artfully combines fragrant strawberry and blackberry aromas with earthy, cocoa dust undertones. Flavors of harmonious red and black fruits including tart plums are underpinned by spice. A high note of acidity balances the wine’s silky mouthfeel and shapes its harmonious and persistent finish. After harvesting the fruit, we de-stem and hand-sort the grapes before moving them into open-top fermenters where we use gentle, manual punch-downs to protect the delicacy of the Pinot Noir grapes. Once fermentation is complete, we rack the free-run juice into French oak barrels (42% new) where the wine ages for 12 months before bottling.
